I was browsing Pinterest the other day, and I ran across this recipe for Shrimp and Asparagus Stir-fry with Lemon Sauce. I love asparagus and I love stir-fries, so why not? When I clicked the link, it took me to a blog I recognized: Home Cooking Memories.
The first year I went to Mixed Con, I met Brandie, the creative force behind Home Cooking Memories. We ended up hanging out with a couple other bloggers in a little group most of the weekend. I couldn’t believe she flew all the way across the country from Las Vegas to Mixed Con, but she grew up near where Mixed Con was, and her family still had a home in Virginia. Her blog is full of quick and easy–and delicious–recipes perfect for feeding kids and families on weeknights when you need something delicious and home-cooked without spending all evening at the stove. I made several other recipes from her blog, so I was thrilled that I ran across one on pinterest randomly. I knew it was going to be good.
PROJECT RECIPE verdict: Duh. Keeper. Not because I like Brandie’s blog, but this is some seriously good stir-fry. It was super quick and easy, and clocked in at under 350 calories (each for 4 servings) including a serving of brown rice! It’s a great way to celebrate asparagus season. All the flavors go together perfectly, like they’re saying “yay, it’s spring!”
How I changed the recipe: I halved it for 2 people. But it would probably be better making the whole recipe for 2 people. Also, I didn’t have any actual lemons, so I had to use lemon juice. It would be better with real lemons and lemon zest. I forgot to add pepper at the end. That would have made the flavors pop even more. But it was still good, and we gobbled it up.
This is definitely going to stay in my rotation for go-to recipes when asparagus is in season. It was on the table in about 30 minutes, and I think it disappeared in under 5!
